Piment d’Espelette is the powder resulting from the grinding of a specific pepper. It smells like paprika but it is not overly hot and has a more intensive flavor palette. According to tradition, Columbus brought the pepper plant back from Mexico, but the only place where it would thrive was in the village of Espelette in the French Basque country. Therefore, it is only here and in 9 surrounding villages that this special small pepper is cultivated. Since 1999, Piment d’Espelette has been granted AOC status (appellation d’origine contrôlée) and it is strictly checked that the pepper only comes from one of these ten villages.
