Morello cherries are sour cherries which, like normal cherries, belong to the family of stone fruits. In other words, just like normal cherries, they have a hard stone in the middle. Morello cherries are red to dark red in colour with red flesh and a hard stone in the middle.
The biggest difference with normal cherries is in the taste. The morello is so sour that they are only suitable to eat when they are fully ripe. Morello cherries are therefore often preserved as a compote or jam, pickled in alcohol or processed into juice or used as a pie filling. They grow on cherry trees throughout Western Europe.
