Truffle Carpaccio

The black summer truffle can be found in Italy. They are acquired by truffle hunters and their specially trained dogs. Summer truffles are also found in France, Southern England and Germany. However, the best truffles are those from the chalk slopes of Umbria, where the truffles for the Oil & Vinegar Truffle Carpaccio are collected from the early spring until the late summer.

Truffle Carpaccio consists of paper-thin slices or the black summer truffle in sunflower oil. This summer truffle has a brown or yellow color, inside out, and is able to give dishes with an earthy flavor.
