Bruschetta is a dish with its origins in central Italy. It is basically toasted bread, spread with garlic and sprinkled with some extra virgin olive oil and salt and pepper. This can be varied with red chili, tomato, sausage, vegetables and/or (mozzarella) cheese. It is also nice to mix the olive oil with some Italian herbs such as basil or oregano for an extra flavour accent.

Bruschetta is usually served as a snack or an appetizer. Today, the term 'bruschetta' is often used to mean the topping which is smeared on the toasted bread.

    • 4 eggs, soft boiled • Egg Mate grinder • 4 generous slices of bread • Bruschetta di asparagi (asparagus bruschetta) • Olive Oil with Garlic

  • Getting started

    Sprinkle the slices of bread with Olive Oil with Garlic and toast them under an oven grill until brown on both sides. Remove the bread from the oven, spread with Bruchetta di Asparagi and sprinkle with Egg Mate spices.

    Step 2

    Then put the bread back under the grill for a further two minutes. Afterwards, slice the bread into thin strips. At the table, dip the bread strips in the soft-boiled egg.

    Tips

    Put the Egg Mate grinder on the table to give the egg extra taste according to choice. Also delicious as a brunch dish!

    Variation tip

    Enhance this dish by adding roasted asparagus tips wrapped in smoked ham.
    Poach the eggs and lay them on whole slices of bread, prepared as above.
