Whether you are using a charcoal BBQ or not, this recipe adds that authentic smoky flavour in every bite!  We added our Chipotle Chilli Sauce to the marinade.  Chipotle chilli peppers give the chicken a sweet, smoky taste that every barbeque fan loves.
Here are our simple-to-use tips for making marinating easy. 

-    Using something sour, like lemon juice or yoghurt will keep the chicken tender. In this recipe we chose lime.
-    The softer the structure of the meat, the shorter you have to marinate it. Two to 4 hours is enough for turkey or chicken.
-    A deep dish or bowl is best for marinating.  Make sure you are using a non-reactive container.  Metal containers can influence the taste.
-    Make sure all the ingredients are at room temperature before creating the marinade.  Herbs are better absorbed at room temperature.  

 

  • Ingredients

    • 600 g chicken thighs
    • 100 ml coconut cream
    • 150 ml Chipotle Chilli Sauce
    • 1 lime
    • ½ bunch of coriander
    • 1 onion
    • 1 clove of garlic
    • Black pepper
    • Sea salt
  • Method

    Mix the coconut cream with the Chipotle Chilli Sauce and the juice and zest of the lime.
    Chop the coriander leaves very finely and add them. Then add some salt and pepper according to taste and mix together. Chop the garlic and finely chop the onion before also adding them. Marinate the chicken in the marinade for a minimum of 5 hrs. The lime juice will make the chicken more tender. Take the chicken thighs out of the marinade and barbecue or cook until they are cooked through and nicely coloured.

    Serving tip

    Serve on ciabatta with a fresh salad of cucumber, green pepper, red bell pepper, tomato and spring onions. Add some extra Chipotle Chilli Sauce according to taste.
