Mezze is the designation of small appetizers from the Greek cuisine. Just like Spanish tapas and Italian antipasti, it is a light dish that can be enjoyed as a bite in between courses or as a starter. Mostly in combination with an alcoholic beverage. Mezze enlarges and supplements the taste of the drink, raki or ouzo. Besides, it also is a social get together. In Greece, it is very common for families and groups of friends to come together and eat mezze. The small pales and bowls are shared with everyone on the table. There are a lot of dishes that are traditionally eaten as mezzes, but the variation of dishes on the table can be very different and depends on personal taste.

Moorish Chicken Briouat: • ½ lb chicken, cut into small pieces • 1 ½ Tbsp raisins • 1 onion, chopped • phyllo dough • 2 tbsp Moorish Rub • Taris Olive Oil • 1 egg for egg wash • Grapeseed oil for frying • powdered sugar (optional)
