  • Preparation

    Preparation pizza base:

    • dissolve the yeast in the water and mix into the pizza flour and salt. Add olive oil and knead into a dough. Allow to rise for 90 minutes under a damp cloth.

    Preparation pizza Caprese:

    • pre-heat the oven to 225 °C. Halve the cherry tomatoes. Take off the basil leaves and tear into smaller pieces. Roll the pizza dough out into a thin sheet and place on a baking tray or pizza stone. Thinly spread Salsa della mamma on top, then add the cherry tomatoes, Pomodoro della Mamma , Pesto Genovese and torn buffalo mozzarella. Finish the pizza in the oven until the base is golden brown and crunchy. Depending on the oven this will take 5 to 10 minutes. Sprinkle basil on the hot pizza and finish with basil olive oil for extra flavour.
